Kids Health Notes Give-away: "Jenny Craig 30 Meals in 30 Minutes" cookbook
When it comes to cooking, I am all about efficiency. As much as I love to whip up delicious AND nutritious recipes, I can’t spend too much time in the kitchen. That’s why I was impressed with this new cookbook -
“Jenny Craig 30 Meals in 30 Minutes“
When it said “30 minutes” it really was! I just had it for a week and haven’t tried everything, but the dishes I cooked were delicious and I knew exactly how much calories I was eating, which is good for postpartum health.
The cookbook is a spiral-bound collection of menus, not just recipes. Each facing page includes a full menu - entree and side/desert; shopping and kitchen staple lists; “quick meal countdown” to coordinate every dish; and of course, nutrition information.
So here’s something for you. I’ll be giving away five (5) copies of “Jenny Craig 30 meals in 30 minutes” cookbook!
How to join:
- Share your tip(s) for creating fast, delicious and nutritious meals for the family.
- Blogger or not, you get additional entries when you (1) share a 30-minute recipe; (2) share a link to the recipe on YOUR own blog; (3) link this contest back to your blog.
- Eligibility - one entry per person per email daily (so you get more entries if you come back tomorrow, but rules 1 and 2 above apply for each entry).
- Contest is open to residents of the US, Canada and Puerto Rico. If you have a blog, do post your URL as well, as I love to visit my readers’ sites and catch a conversation.
The contest ends 12:00 midnight EST May 10, 2008 in time for Mother’s day the next day. Five (5) winners will be randomly drawn.
I have 4 other contests for Mother’s Day. Check them out, and join, HERE.

Ziploc makes the best steamer bags. I buy fresh veggies, cut them up, throw them in the bag and cook with every meal. You can even season them in the bag..so little to no effort and they taste GREAT

I usually will double a recipe and freeze half for a later meal. On busy days, it’s so easy to just heat that up and voila!

Before I freeze my pork chops, I put them in Ziplok bags in marinade and freeze them that way. Then, when they are thawing out, they are also marinading and are ready for throwing on the grill.

This time of year I really like to grill vegetables. I cut up squash, zucchini, mushrooms and Vidalia Onions and marinade them in a light balsamic vinaigrette. I then place them in a grill basket and cook them while I am grilling my meats.

Cook a lot of chicken breast on Sunday and use it throught the week in salads, fajitas, chicken salad, add BBQ sauce to it. You can freeze it and then thaw it out if it will not be used up in less than 2 days.

I’ve embraced the fact that I don’t always have time to “cook.” I buy great organic frozen veggies for the microwave and some heat and eat entrees from the health food store (like the polenta lasagne from Trader Joe’s). I do like the pre-made marinades (in the condiment aisle at my store) where all I need to do is throw the chicken or steak in the bag in the morning and it’s ready for the George Foreman by dinnertime. Add rolls or pre-made salad and dinner is done with little cleanup. Thanks for the contest!

I make easy mom-mcmuffins the night before….
whisk and egg in a small custard dish, cook on high in microwave for 1 minute, top with low fat American cheese and a couple of slices of Buddig ham. Put in a toasted whole wheat English muffin, cool, wrap in plastic wrap and it’s ready for a quick nuke in the morning. A yummy protein and carb breakfast…just add fruit or fruit juice and it’s a great start for the day.

I’m not the best cook and my kids are really picky but we all love homemade pizza. You can use store made dough or even english muffins (whole wheat) and then top with your favorite toppings, cheese, sauce, veggies. They’re delicious, easy, and fun for the whole family to make.

I grill several pounds of boneless skinless chicken breast every Sunday. Then I slice them up and put them in the freezer in meal size portions. You can make soups, stirfrys, pasta, and chef salads even when you forget to put something out to defrost.

My best timesaving tip is to prepare the meal when the kids are napping or quiet time (older kid). It simply goes a lot quicker to put together a pot pie or casserole or to start a soup when the kids are not under foot. Then, when dinner time approaches, I can just pop it in the oven.

I’m a “least-energy-curve” kinda person, so anything I can optimize, do ahead of time, prepare in advance, to be ready for the thundering hoard to appear, I’m in favor!!
Speaking of which: my vote is for ZipLock bags as one of the best “git ‘er done ahead-of-time” aids around…

I buy big packs of lean hamburger meat and pat out the patties. I put each pattie in an individual bag and put them in the freezer. When I need a quick , but tasty meal, I just pull a pattie out and cook it!

My tip. Meal Planning! The more planning you put into your meals, the more likely they are to be healthy! Also if you can plan ahead, and maybe freeze to defrost at a later date, it helps you keep organized and makes for some quick meals.
